The following is a new series of continuing education programs for food service professionals offered by Kingsborough Community College: Center for Economic and Workforce Development.
CTF 14 FACILITIES: Greening Commercial Kitchens and Training “Green-Savvy” Hospitality Staff
In the first workshop you’ll learn how to establish a commercial composting operation that includes food and carryout packaging that can be processed by NYC’s sanitation department. The second workshop is led by a professional restaurant designer and explores retrofitting commercial kitchens to increase energy efficiency. A specialist from the NY State Energy Research and Development Authority will be on hand to explain the assessment process of commercial food facilities. The third workshop trains dining managers on how to educate front-of-the-house teams on sustainability initiatives. Upon completion of this course series, students will be offered an opportunity to design and test their ideas for sustainable food service operations at our Institute for Virtual Enterprise.
